Description

This vibrant Zucchini Noodle Stir Fry is a quick, healthy, and flavorful dish that combines crunchy vegetables with tender zucchini noodles, all tossed in a savory sesame-ginger sauce. Perfect for a light lunch or dinner, it’s easy to customize with your choice of protein for a balanced meal.

Ingredients

Scale

Vegetables

  • 4 medium zucchinis (spiralized into zoodles, about 4 cups)
  • 1 cup bell peppers (sliced; mix of red, yellow, green)
  • 1 cup carrots (shredded or julienned)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 scallions (sliced)

Sauce & Oils

  • 3 tbsp coconut aminos or low-sodium soy sauce
  • 1 tbsp sesame oil

Protein (Optional)

  • 1 cup protein (e.g., chicken, shrimp, or tofu)

Instructions

  1. Prepare the Zoodles: Spiralize the zucchinis to create about 4 cups of zoodles. Lay them out on paper towels to absorb any excess moisture, preventing the stir fry from becoming soggy.
  2. Sauté the Aromatics: Heat the sesame oil in a large skillet over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant, infusing the oil with flavor.
  3. Add Your Vegetables: Toss in the sliced bell peppers and shredded or julienned carrots. Stir-fry them for about 5 minutes until they soften slightly but still retain a pleasant crunch.
  4. Combine Zoodles & Sauce: Gently fold in the zucchini noodles along with the coconut aminos or low-sodium soy sauce. Cook for an additional 3 to 4 minutes, stirring occasionally, until the zoodles are warmed through but still al dente.
  5. Finish & Serve: Remove the skillet from heat and stir in the sliced scallions. If using, add cooked protein at this stage to warm through. Serve the stir fry hot for the best taste and texture.

Notes

  • You can substitute coconut aminos with low-sodium soy sauce or tamari for gluten-free option.
  • To reduce moisture, salt the spiralized zucchini lightly and let sit for 10 minutes, then squeeze out excess water.
  • For added protein, cook chicken, shrimp, or tofu separately before adding to the stir fry.
  • Adjust the cooking time for vegetables if you prefer them more tender or crispier.
  • This dish is best served immediately to maintain the textures and freshness of the ingredients.
