Ingredients
Scale
Slaw Ingredients
- 2 cups Watermelon Rind (shredded, white part only)
- 1 cup Shredded Carrots
- 1/2 cup Fresh Cilantro (chopped)
- 1/2 medium Red Onion (soaked in cold water)
- 1 Jalapeño (diced, adjust amount for desired heat)
Dressing
- 1 lime (juice freshly squeezed)
- 2 tablespoons Honey (or agave/maple syrup for vegan option)
- 3 tablespoons Olive Oil (or avocado oil)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Prepare the Rind: Cut the green outer skin off the watermelon rind, leaving just the white part. Slice it into thin strips or shred it using a box grater to achieve a crunchy texture.
- Combine Ingredients: In a large mixing bowl, add the shredded watermelon rind, shredded carrots, chopped fresh cilantro, soaked and drained red onion, and diced jalapeño. Toss gently to combine all components evenly.
- Make the Dressing: In a small bowl, whisk together freshly squeezed lime juice, honey (or substitute), and olive oil until the dressing is smooth and well blended. Season with salt and pepper to your taste preferences.
- Dress the Slaw: Pour the dressing over the watermelon rind mixture. Toss thoroughly to ensure every ingredient is coated with the dressing. Allow the slaw to rest for about 10 minutes to let the flavors meld.
- Serve and Enjoy: Transfer the slaw to a serving bowl and chill if desired. This refreshing slaw is perfect as a side dish, especially when paired with grilled meats during summer gatherings.
Notes
- Soaking the red onion in cold water reduces its sharpness for a milder flavor.
- Adjust the amount of jalapeño depending on your preferred heat level.
- For a vegan version, substitute honey with maple syrup or agave nectar.
- You can prepare the slaw a few hours ahead to enhance the flavors.
- Ensure to remove all the green outer rind from the watermelon before shredding for the best texture.
