Description

Delight in the rich and nutty flavor of these Tahini Butter Chocolate Chip Cookie Bars. Combining creamy tahini with classic butter and honey, these cookie bars offer a unique twist on a beloved dessert. Soft, chewy, and packed with semi-sweet chocolate chips, they make the perfect treat for any occasion.

Ingredients

Scale

Wet Ingredients

  • 2 sticks (1 cup) salted butter, at room temperature
  • 1/3 cup brown sugar
  • 1/2 cup honey
  • 2/3 cup tahini
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt

Add-Ins

  • 2 cups semi-sweet or dark chocolate chips or chunks

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper to prevent sticking and for easy removal of the cookie bars.
  2. Mix Wet Ingredients: In a large bowl, beat together the softened butter, brown sugar, honey, and tahini until fully combined and creamy. Then, add the eggs one at a time, beating well after each addition to ensure a smooth mixture. Stir in the vanilla extract until incorporated.
  3. Add Dry Ingredients and Chocolate: Gradually add the flour, baking soda, and salt to the wet mixture, stirring gently until just combined. Fold in the chocolate chips or chunks to evenly distribute them throughout the dough.
  4. Spread Dough and Bake: Evenly spread the cookie dough into the prepared baking dish, smoothing the surface with a spatula. Bake in the preheated oven for 16 to 20 minutes to achieve a soft and slightly doughy texture. For firmer bars, you can bake them a bit longer, but keep an eye to avoid overbaking.
  5. Cool and Serve: Remove the bars from the oven and let them cool in the pan for about 30 minutes. Once cooled, cut into 24 bars. Enjoy immediately or store in an airtight container at room temperature for up to 4 days.

Notes

  • For a more intense tahini flavor, use a high-quality, lightly toasted tahini.
  • Ensure butter and eggs are at room temperature for best mixing results.
  • You can substitute honey with maple syrup for a different sweetness profile.
  • Store bars in an airtight container to maintain freshness; they can also be frozen for longer storage.
  • Adjust baking time slightly depending on your oven’s exact temperature and desired texture.
