Description

These irresistible Strawberry Brownies combine the rich, moist texture of classic brownies with the vibrant, fruity flavor of strawberry cake mix. Topped with a sweet strawberry glaze, they offer a delightful twist on a traditional favorite that’s perfect for any occasion.

Ingredients

Scale

Brownie Batter

  • 1 (15.25-ounce) box strawberry cake mix (such as Duncan Hines)
  • 2 large eggs
  • â…“ cup vegetable oil
  • 1 teaspoon vanilla extract

Strawberry Glaze

  • ¾ cup powdered sugar
  • 2 tablespoons strawberry preserves
  • 1 ½ tablespoons milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350℉. Grease an 8×8-inch or 9×9-inch baking dish and line the bottom with parchment paper, allowing an overhang on the sides to easily lift the brownies out once baked.
  2. Mix Batter: In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Mix until just combined; the batter will be thick.
  3. Transfer Batter to Pan: Scrape the thick batter into the prepared baking dish and smooth the top evenly with a rubber spatula.
  4. Bake Brownies: Place the baking dish in the oven and bake for 20 to 23 minutes. Test doneness by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs. Allow the brownies to cool in the pan for at least 20 minutes.
  5. Make Glaze: In a small bowl, whisk together the powdered sugar, strawberry preserves, and milk until smooth and pourable.
  6. Glaze Brownies: Once the brownies are cooled, spread the strawberry glaze evenly over the top. Allow the glaze to set before slicing.

Notes

  • If a thicker glaze is desired, reduce the milk slightly.
  • For an extra strawberry flavor, add chopped fresh strawberries into the batter before baking.
  • Store brownies in an airtight container at room temperature for up to 3 days.
  • Use parchment paper overhang to easily lift brownies from the pan for neat slicing.
