Ingredients
Scale
Banana Layer
- 4 ripe bananas, sliced
- 1 tablespoon lemon juice
Batter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 egg, beaten
Topping
- 1/4 cup brown sugar
- Whipped cream or vanilla ice cream (optional)
Instructions
- Preheat and prepare dish. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish thoroughly to prevent sticking.
- Prepare bananas. In a medium bowl, toss the sliced bananas with lemon juice to prevent browning and set aside.
- Mix dry ingredients. In a separate bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon to form a uniform dry mixture.
- Combine wet and dry ingredients. Add the melted butter, milk, vanilla extract, and beaten egg to the dry mixture. Stir gently until just combined, taking care not to overmix to maintain batter tenderness.
- Assemble cobbler. Spread the banana slices evenly over the bottom of the prepared baking dish.
- Add batter over bananas. Pour the batter evenly over the banana layer, spreading it gently to cover all pieces.
- Sprinkle topping. Evenly sprinkle the brown sugar over the top of the batter to create a sweet crust upon baking.
- Bake the cobbler. Place the baking dish in the oven and bake for 45-50 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
- Serve warm. Remove from oven and serve warm, optionally topped with whipped cream or vanilla ice cream for added richness.
Notes
- Using lemon juice helps keep the bananas from browning and adds a subtle tang.
- Do not overmix the batter for a lighter, fluffier texture.
- Serving the cobbler warm with whipped cream or ice cream enhances the dessert experience.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated before serving.
