  • 2 tablespoons salted butter (or dairy-free butter to make it vegan)
  • 1 medium onion, chopped
  • 1 tablespoon all-purpose flour (or gluten-free flour)
  • 1 medium head green cabbage, cored and roughly chopped
  • 8 cups water
  • 3 tablespoons Better Than Bouillon (Chicken or Vegetable to make it vegan)
  • Kosher salt, to taste
  • Black pepper, to taste


Instructions

  1. Sauté the onion: In a large pot, melt the butter over medium-low heat. Add the chopped onion and cook, stirring occasionally, until the onion is soft but not browned, approximately 5 minutes.
  2. Add and cook the flour: Stir in the flour and continue cooking for about 2 minutes. This step helps cook out the raw flour flavor and slightly thickens the soup later on.
  3. Combine main ingredients and simmer: Pour in the water and add the Better Than Bouillon. Stir to dissolve the bouillon fully. Add the chopped cabbage, increase the heat to medium, and bring to a boil. Once boiling, reduce heat to medium-low, cover the pot, and let the soup simmer gently until the cabbage and other vegetables are tender, about 20 minutes.
  4. Season and adjust: Taste the soup and adjust with kosher salt and black pepper as needed before serving.
