- 1 medium onion, chopped

- 1 medium head green cabbage, cored and roughly chopped
- 8 cups water
- 3 tablespoons Better Than Bouillon (Chicken or Vegetable to make it vegan)
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Sauté the onion: In a large pot, melt the butter over medium-low heat. Add the chopped onion and cook, stirring occasionally, until the onion is soft but not browned, approximately 5 minutes.
- Add and cook the flour: Stir in the flour and continue cooking for about 2 minutes. This step helps cook out the raw flour flavor and slightly thickens the soup later on.
- Combine main ingredients and simmer: Pour in the water and add the Better Than Bouillon. Stir to dissolve the bouillon fully. Add the chopped cabbage, increase the heat to medium, and bring to a boil. Once boiling, reduce heat to medium-low, cover the pot, and let the soup simmer gently until the cabbage and other vegetables are tender, about 20 minutes.
