Description

This classic Salisbury Steak recipe features tender ground beef patties smothered in a rich mushroom and onion gravy made from beef broth, ketchup, and Worcestershire sauce. Perfectly browned on the stovetop and simmered to perfection, it’s a comforting and hearty meal served best over mashed potatoes or egg noodles.

Ingredients

Scale

For the Patties

  • 1½ pounds lean ground beef
  • ¼ cup condensed beef broth
  • ½ cup Panko bread crumbs
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

For the Sauce and Toppings

  • 2 tablespoons salted butter
  • 1 medium onion, thinly sliced
  • 4 ounces mushrooms, thinly sliced
  • ¼ cup condensed beef broth
  • 1 tablespoon all-purpose flour
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard powder
  • ½ cup water

Instructions

  1. Cook onions and mushrooms: In a 12-inch skillet, melt the butter over medium heat. Add the sliced onions and cook until softened, about 3 to 4 minutes. Add the mushrooms and cook until their liquid has been released and mostly evaporated. Transfer the mixture to a bowl and set aside.
  2. Prepare the beef patties: In a large bowl, combine ground beef, ¼ cup beef broth, Panko bread crumbs, egg, garlic powder, and black pepper. Mix gently and shape into six 4-inch diameter patties.
  3. Make the sauce: In a small bowl, whisk flour with about 2 tablespoons of beef broth to form a smooth paste. Add the remaining beef broth, ketchup, Worcestershire sauce, mustard powder, and water; whisk to combine.
  4. Brown the patties: Heat the same skillet over medium heat. Place half the patties in the skillet and brown for 2 minutes per side—they do not need to be cooked through. Transfer to a plate and brown the remaining patties the same way.
  5. Assemble and simmer: Return all patties to the skillet. Top with the cooked mushroom and onion mixture. Whisk the prepared sauce and pour it evenly over the patties.
  6. Simmer to finish cooking: Bring the skillet to a simmer over medium-low heat. Cover and continue to cook for 14 to 20 minutes until the beef is cooked through and flavors meld.
  7. Serve: Serve the Salisbury steak hot over mashed potatoes or egg noodles for a classic comforting meal.

Notes

  • Be sure not to overwork the meat mixture to keep the patties tender.
  • Using lean ground beef helps reduce fat but still maintains good flavor.
  • If you prefer a thicker gravy, you can adjust the amount of flour accordingly.
  • Serve with mashed potatoes or egg noodles to soak up the delicious sauce.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
