Description

Pepperoni Pizza Rollups are a quick and easy low-carb snack or appetizer featuring melted mozzarella cheese, tangy pizza sauce, and savory pepperoni wrapped in a crispy tortilla. Perfect for a tasty bite that’s ready in just minutes using a simple stovetop skillet method.

Ingredients

Scale

Cheese

  • 4 Cups Shredded Mozzarella Cheese

Wraps

  • 8 Low-Carb Tortillas

Fillings

  • ½ Cup Pizza Sauce
  • 48 Pepperoni Slices

Instructions

  1. Preheat Skillet: Heat a large, nonstick skillet over medium-high heat to prepare for melting cheese and toasting tortillas.
  2. Melt Cheese: Add ½ cup of shredded mozzarella cheese to the skillet and allow it to melt undisturbed until it starts to bubble and brown slightly, forming a crispy base.
  3. Add Tortilla: Place one tortilla on top of the melted cheese and gently press it down into the cheese to adhere. When the cheese begins to brown beneath the tortilla, carefully flip the tortilla over so the cheese side is up.
  4. Add Sauce and Pepperoni: Spoon about 1 tablespoon of pizza sauce onto the center of the tortilla, then layer approximately 6 slices of pepperoni evenly over the sauce.
  5. Roll Up: Carefully roll the tortilla from one side to the other, enclosing the sauce, pepperoni, and melted cheese, creating a compact rollup ready to eat.
  6. Repeat: Repeat steps 2 through 5 for each of the remaining tortillas to make a total of 8 rollups.

Notes

  • You can customize the filling by adding other favorite pizza toppings like sliced olives, mushrooms, or bell peppers.
  • Use low-carb tortillas to keep the rollups keto-friendly and lower in carbohydrates.
  • Serve with extra pizza sauce or ranch dressing for dipping.
  • If you prefer, you can bake the rollups in a preheated oven at 375°F for 10 minutes until crispy instead of skillet cooking.
