Description

A quick and flavorful Pepper Steak Stir Fry featuring tender flank steak and colorful bell peppers cooked in a savory soy-ginger sauce. Perfect for a healthy weeknight dinner served over steamed rice or noodles.

Ingredients

Scale

Vegetables

  • 1 red bell pepper, cored, seeded, and cut into strips
  • 1 green bell pepper, cored, seeded, and cut into strips
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger

Protein

  • 1 1/4 pounds flank steak, thinly sliced

Sauce & Seasonings

  • 1 tablespoon vegetable oil, divided
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup water

Instructions

  1. Heat Oil: Heat 1 teaspoon of vegetable oil over medium-high heat in a large pan or skillet until shimmering to prepare for cooking the vegetables.
  2. Cook Peppers: Add the sliced red and green bell peppers to the hot pan and cook for 3-4 minutes until they become just tender with slight charring. Remove the peppers from the pan and set aside to retain their texture.
  3. Cook Steak: Add the remaining vegetable oil to the pan. Season the thinly sliced flank steak with salt and pepper. Increase the heat to high and add the steak to the pan, cooking for 5-6 minutes, stirring occasionally, until the steak is lightly browned and cooked through.
  4. Add Aromatics: Stir in the minced garlic and ginger with the steak, cooking for about 30 seconds until fragrant to infuse the dish with flavor.
  5. Combine Peppers and Steak: Return the cooked bell peppers to the pan, mixing them well with the steak and aromatics for a balanced combination.
  6. Prepare Sauce: In a small bowl, whisk together the soy sauce, sugar, water, and cornstarch until the mixture is smooth and ready to thicken the stir fry.
  7. Simmer and Thicken: Pour the prepared sauce into the pan with the steak and peppers. Bring the mixture to a simmer over medium heat and cook for 2-3 minutes until the sauce thickens to a glossy consistency, coating the ingredients beautifully.
  8. Serve: Serve the pepper steak stir fry hot over steamed rice or noodles, optionally garnishing to add a finishing touch.

Notes

  • Thinly slicing the flank steak against the grain helps keep the meat tender.
  • Adjust sugar quantity to taste if you prefer a less sweet sauce.
  • Serve immediately to enjoy the best texture and flavor.
  • This dish can be customized by adding onions or mushrooms as additional vegetables.
  • Leftovers can be stored in the refrigerator for up to 2 days.
