Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
Stuffing
- 2 cups mushrooms, finely chopped
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 1/2 cup cream cheese, softened
- 1/3 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the chicken breasts.
- Prepare Chicken Pockets: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through.
- Sauté Vegetables: Heat olive oil and butter in a skillet over medium heat. Add finely chopped mushrooms and onion, cooking for 5 to 6 minutes until mushrooms release moisture and become tender.
- Add Garlic: Stir in minced garlic and cook for an additional minute. Remove skillet from heat and allow the mixture to cool slightly.
- Make Filling: In a mixing bowl, combine the sautéed mushroom mixture with cream cheese, mozzarella, Parmesan, dried thyme, paprika, salt, and black pepper. Mix thoroughly until well blended.
- Stuff Chicken: Spoon the cheese and mushroom filling evenly into each chicken breast pocket. Secure the opening with toothpicks if needed to prevent filling from spilling out.
- Bake: Place the stuffed chicken breasts into a lightly greased baking dish. Bake in the preheated oven for 25 to 30 minutes until the chicken is fully cooked and reaches an internal temperature of 165 degrees Fahrenheit.
- Garnish and Serve: Remove from oven and sprinkle fresh chopped parsley on top before serving.
Notes
- For a golden brown exterior, sear the stuffed chicken breasts in a hot skillet for 2 to 3 minutes per side before baking.
- Spinach can be added to the mushroom filling for added flavor and nutrition.
- Serve the dish alongside roasted vegetables, rice, or a fresh salad for a complete meal.
