Description

This Mushroom Stuffed Chicken Breast recipe features tender chicken breasts filled with a creamy mixture of sautéed mushrooms, garlic, onion, and three cheeses. Baked to perfection, it offers a flavorful and comforting main course that’s perfect for any dinner.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Stuffing

  • 2 cups mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/2 cup cream cheese, softened
  • 1/3 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the chicken breasts.
  2. Prepare Chicken Pockets: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through.
  3. Sauté Vegetables: Heat olive oil and butter in a skillet over medium heat. Add finely chopped mushrooms and onion, cooking for 5 to 6 minutes until mushrooms release moisture and become tender.
  4. Add Garlic: Stir in minced garlic and cook for an additional minute. Remove skillet from heat and allow the mixture to cool slightly.
  5. Make Filling: In a mixing bowl, combine the sautéed mushroom mixture with cream cheese, mozzarella, Parmesan, dried thyme, paprika, salt, and black pepper. Mix thoroughly until well blended.
  6. Stuff Chicken: Spoon the cheese and mushroom filling evenly into each chicken breast pocket. Secure the opening with toothpicks if needed to prevent filling from spilling out.
  7. Bake: Place the stuffed chicken breasts into a lightly greased baking dish. Bake in the preheated oven for 25 to 30 minutes until the chicken is fully cooked and reaches an internal temperature of 165 degrees Fahrenheit.
  8. Garnish and Serve: Remove from oven and sprinkle fresh chopped parsley on top before serving.

Notes

  • For a golden brown exterior, sear the stuffed chicken breasts in a hot skillet for 2 to 3 minutes per side before baking.
  • Spinach can be added to the mushroom filling for added flavor and nutrition.
  • Serve the dish alongside roasted vegetables, rice, or a fresh salad for a complete meal.
