Description

Lemon–Ginger Chili Sunshine Jam is a vibrant and zesty preserve that combines the tartness of fresh lemons with the warming spice of ginger and a hint of fiery red chilies. Perfect for brightening up your breakfast toast or adding a zing to desserts, this jam balances sweet, spicy, and tangy flavors in every bite.

Ingredients

Scale

Jam Ingredients

  • 4 cups fresh lemons, juiced
  • 1 cup grated ginger
  • 2 cups sugar
  • 1-2 fresh red chilies, finely chopped
  • 1 packet pectin

Instructions

  1. Prepare Lemon Juice: Juice the fresh lemons carefully, ensuring to remove all seeds so they don’t end up in the jam.
  2. Combine Ingredients: In a large pot, mix together the lemon juice, grated ginger, finely chopped red chilies, and sugar.
  3. Dissolve Sugar: Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely.
  4. Add Pectin and Boil: Stir in the pectin packet, then bring the mixture to a rolling boil, which means a boil that doesn’t stop bubbling when stirred.
  5. Boil Briefly: Maintain the rolling boil for 1-2 minutes, stirring constantly to avoid burning or sticking.
  6. Cool and Jar: Remove the pot from heat and allow the jam to cool slightly, then pour it into sterilized jars to ensure food safety.
  7. Seal and Store: Seal the jars tightly and let them cool completely at room temperature before storing them in the refrigerator for freshness.

Notes

  • Use sterilized jars to prevent contamination and prolong shelf life.
  • Adjust the number of chilies based on your heat preference.
  • If you prefer a smoother jam, you can strain the mixture before boiling to remove any fibrous bits.
  • This jam is best consumed within a few weeks when refrigerated.
  • Ensure constant stirring during boiling to prevent the jam from sticking or burning.
