Ingredients
Scale
Chicken
- 1 lb. chicken tenders (sliced in half into strips)
Seasonings & Flavorings
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 4 cloves garlic (minced)
- 1 shallot (minced)
- Juice of 1 lemon
- 2 tbsp parsley (chopped)
Cooking Oil
- 2 tbsp extra virgin olive oil
Garnish
- Lemon wedges
- Chopped parsley
Instructions
- Prepare Chicken: If the chicken tenders are thicker than a finger, place them in a freezer bag and gently pound them with the back of a skillet or pan to thin them out, then cut each tender in half lengthwise into strips.
- Season Chicken: In a medium mixing bowl, add the chicken strips along with paprika, salt, and black pepper. Toss gently to evenly coat all pieces with the seasonings.
- Heat Skillet: Place your skillet over medium-high heat and add the olive oil. Once the oil heats up and begins to shimmer, it’s ready for cooking.
- Cook Chicken with Aromatics: Add the seasoned chicken strips, minced shallots, and garlic to the hot skillet. Stir-fry everything together, stirring frequently, until the chicken is cooked through, about 3 minutes.
- Add Lemon and Herbs: Once cooked, pour in the fresh lemon juice and sprinkle chopped parsley over the chicken. Stir everything to combine and let the flavors meld together for a minute. Add a pinch more salt if needed.
- Serve: Remove the lemon garlic chicken from the skillet and transfer to a serving plate. Garnish with lemon wedges and additional parsley before serving hot.
Notes
- For even cooking, pounding the chicken to an even thickness is crucial.
- Use fresh lemon juice for the best bright citrus flavor.
- You can serve this dish over rice, quinoa, or a fresh salad.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Adjust the garlic quantity based on your preference for flavor intensity.
