  • 6 kiwis, peeled and cut into halves or quarters
  • 4 kiwis, peeled and sliced for garnish
  • 170 grams blueberries, crushed
  • 170 grams blueberries, whole for garnish

Liquid and Sweetening Agents

  • 60 millilitres fresh lime juice (from 1 to 2 limes)
  • 100 grams granulated sugar, or to taste
  • 35 grams fresh mint leaves
  • 360–480 millilitres sparkling water
  • 250–375 millilitres white rum, according to preference

Finishing Touches

  • Ice cubes, as needed
  • Blue and/or green decorating sugar for glass rims


Instructions

  1. Prepare Kiwi Puree: Combine halved or quartered kiwis, sugar, and lime juice in a small food processor. Pulse until a coarse puree forms, ensuring the mixture retains some texture.
  2. Mix Kiwi and Rum: Transfer the kiwi puree into a large bowl or pitcher and incorporate the white rum, starting with 250 millilitres. Increase the amount based on your preference for strength and flavor.
  3. Crush Blueberries: Use a muddler to gently crush 170 grams of blueberries and set them aside for layering and garnish.
  4. Prepare Glass Rims: Rub a lime wedge around the rim of each glass. Dip the moistened rims into blue or green decorating sugar to coat them attractively.
  5. Assemble Pitcher Ingredients: Layer the kiwi-rum puree in a pitcher, add ice cubes and a generous handful of fresh mint leaves, along with the kiwi slices for visual appeal and flavor.
  6. Add Blueberries and Mint: Add additional ice, distribute the crushed blueberries and more fresh mint leaves, then scatter whole blueberries on top for garnish.
  7. Top with Sparkling Water: Gently pour sparkling water over the assembled ingredients and stir briefly to combine. Adjust sweetness, rum quantity, or water to taste as desired.
  8. Serve Individual Cocktails: In each prepared glass, add a few whole blueberries, ice, mint leaves, and a slice of kiwi. Pour the kiwi-rum mixture followed by sparkling water. Finish each glass with crushed blueberries and a garnish of whole blueberries and fresh mint leaves.
