- 10 ounces Rotel (diced tomatoes with green chilies)
- 1 tablespoon Tomato paste
- 1 teaspoon Chili powder

- ½ teaspoon Salt
- 12 ounces Cauliflower rice
Instructions
- Heat the Oil: Heat olive oil in a large skillet over medium high heat to prepare for sautéing the vegetables.
- Sauté Onion and Garlic: Add the diced onion to the skillet and cook for 3 minutes until it begins to soften. Then add the minced garlic and continue cooking for another 2 minutes until the onion becomes translucent and the garlic fragrant.
- Add Tomato Ingredients and Spices: Pour the Rotel and tomato paste into the skillet. Stir in the chili powder, cumin, and salt, combining all ingredients thoroughly.
- Cook Cauliflower Rice: Add the cauliflower rice to the skillet and stir everything together well. Cook for 3-5 minutes until the cauliflower rice is tender but not mushy, allowing the flavors to meld.
