  • 3 ounces Onion, diced

  • 10 ounces Rotel (diced tomatoes with green chilies)
  • 1 tablespoon Tomato paste
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Salt
  • 12 ounces Cauliflower rice

  1. Heat the Oil: Heat olive oil in a large skillet over medium high heat to prepare for sautéing the vegetables.
  2. Sauté Onion and Garlic: Add the diced onion to the skillet and cook for 3 minutes until it begins to soften. Then add the minced garlic and continue cooking for another 2 minutes until the onion becomes translucent and the garlic fragrant.
  3. Add Tomato Ingredients and Spices: Pour the Rotel and tomato paste into the skillet. Stir in the chili powder, cumin, and salt, combining all ingredients thoroughly.
