Instructions
- Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 7–8 minutes. Remove from skillet and set aside.
- Sauté Vegetables: In the same skillet, add the sliced red, yellow, and green bell peppers along with the sliced onion. Sauté for 5–6 minutes until the vegetables soften and begin to caramelize slightly.
- Add Aromatics and Herbs: Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes if using. Cook for an additional minute to release the flavors of the herbs and garlic.
- Combine Sausage and Liquids: Slice the browned sausages into 1-inch pieces and return them to the skillet. Pour in the chicken broth and add the crushed tomatoes if you want a saucier dish. Stir everything together evenly.
- Simmer: Cover the skillet and reduce heat to low. Let the mixture simmer gently for 15–20 minutes, stirring occasionally, until the sausages are fully cooked through and the flavors meld beautifully.
- Season and Garnish: Taste and season with salt and black pepper as needed. Garnish with freshly chopped parsley before serving for a pop of color and freshness.
