Ingredients
Scale
For the Chicken and Glaze
- 1 lb boneless, skinless chicken breasts
- ¼ cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Oil, for cooking
For the Rice and Avocado Layers
- 1 cup cooked rice (white or brown)
- ¼ cup fresh coriander (chopped)
- 1 tablespoon lime juice
- Salt, to taste
- 2 ripe avocados, sliced
- 1 tablespoon lime juice (for avocado)
- Salt and pepper, to taste (for avocado)
Instructions
- Season the Chicken: Season chicken breasts generously with salt and pepper on both sides to enhance flavor.
- Make the Honey Lime Glaze: In a small bowl, whisk together honey, lime juice, lime zest, and minced garlic until fully combined to create a tangy-sweet glaze.
- Cook the Chicken: Heat oil in a large frying pan over medium-high heat. Add the chicken breasts and cook for 6 to 7 minutes per side, or until golden brown and the internal temperature reaches 71°C (165°F).
- Glaze the Chicken: During the last two minutes of cooking, brush the honey lime glaze onto the chicken, allowing it to caramelize slightly. Remove the chicken from heat and let it rest for 5 minutes before slicing.
- Prepare the Rice Layer: In a bowl, mix the cooked rice with chopped coriander, lime juice, and salt to taste. Stir well to combine all flavors.
- Prepare the Avocado Layer: Slice the avocados and gently toss them with lime juice, salt, and pepper to prevent browning and add bright flavor.
- Assemble the Stack – Step 1: Place a ring mold or large cookie cutter on a serving plate. Press the coriander lime rice firmly into the mold to form the base layer.
- Assemble the Stack – Step 2: Layer the sliced avocado evenly over the rice, slightly overlapping the slices for an attractive look.
- Assemble the Stack – Step 3: Top the avocado layer with the sliced honey lime chicken, arranging the pieces neatly.
- Remove Mold and Garnish: Carefully lift off the mold to keep the stack intact. Drizzle any remaining honey lime glaze around the plate for extra flavor and presentation.
- Serve: Repeat the assembly process with the remaining ingredients for additional servings. Serve immediately while fresh.
Notes
- Use ripe but firm avocados for best texture and ease of slicing.
- Cook chicken thoroughly to ensure food safety; use a meat thermometer to confirm internal temperature of 165°F (71°C).
- If you don’t have a ring mold, you can use a clean, empty can with both ends removed or carefully build the layers without a mold.
- Leftover glaze can be stored separately in the fridge for up to 3 days and used as a dipping sauce.
- This dish pairs beautifully with a crisp green salad or steamed vegetables for a complete meal.
