Instructions

  1. Season the Chicken: Season chicken breasts generously with salt and pepper on both sides to enhance flavor.
  2. Make the Honey Lime Glaze: In a small bowl, whisk together honey, lime juice, lime zest, and minced garlic until fully combined to create a tangy-sweet glaze.
  3. Cook the Chicken: Heat oil in a large frying pan over medium-high heat. Add the chicken breasts and cook for 6 to 7 minutes per side, or until golden brown and the internal temperature reaches 71°C (165°F).
  4. Glaze the Chicken: During the last two minutes of cooking, brush the honey lime glaze onto the chicken, allowing it to caramelize slightly. Remove the chicken from heat and let it rest for 5 minutes before slicing.
  5. Prepare the Rice Layer: In a bowl, mix the cooked rice with chopped coriander, lime juice, and salt to taste. Stir well to combine all flavors.
  6. Prepare the Avocado Layer: Slice the avocados and gently toss them with lime juice, salt, and pepper to prevent browning and add bright flavor.
