Ingredients
Scale
Chicken and Seasonings
- 2 lbs boneless, skinless chicken breasts
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Liquids and Extras
- 1 cup salsa (red or green; red preferred)
- Juice of 2 limes (optional)
- 1/2 cup chicken broth (low or no salt) or water
Instructions
- Prepare the Chicken and Seasonings: Place the 2 lbs of boneless, skinless chicken breasts into the crockpot insert. Evenly sprinkle 1 teaspoon each of chili powder, cumin, paprika, garlic powder, and onion powder over the chicken. Pour 1 cup of salsa on top, and drizzle with the juice of 2 limes if using.
- Add Liquids and Cook: Pour 1/2 cup of low or no salt chicken broth or water into the crockpot. Cover with the lid and cook on low for 4-6 hours for tender, juicy chicken. Alternatively, cook on high for 3-4 hours, though low and slow is preferred for best texture.
- Shred the Chicken: Once cooked through, remove the chicken breasts onto a cutting board and shred using two forks. You can also use a stand mixer or hand mixer to shred the chicken, but avoid using a hand mixer directly in the crockpot to prevent damaging the enamel.
- Mix and Soak: Return the shredded chicken to the crockpot to soak up the remaining juices and absorb all the flavors fully.
- Serve: Serve the shredded chicken with your favorite taco toppings, such as cilantro, diced onions, cheese, or avocado. Enjoy it in warm tortillas, crunchy lettuce wraps, or over rice for a delicious, healthy meal.
Notes
- For extra flavor, add fresh chopped cilantro or jalapeño when serving.
- Use red salsa for a richer taste, but green salsa works well too.
- Chicken broth can be substituted with water if you prefer lower sodium.
- Adjust the level of chili powder or add hot sauce to increase spiciness.
- This recipe is perfect for meal prep and tastes even better the next day.
