Instructions
- Heat oil and sauté aromatics: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and sauté until translucent, about 3 minutes.
- Cook ground beef: Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it into small pieces as it cooks.
- Drain excess fat: Drain any excess fat from the skillet to reduce greasiness.
- Remove beef and set aside: Remove the cooked ground beef mixture from the skillet and set aside temporarily.
- Cook sweet potatoes: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and cook over medium heat until they begin to soften, about 10 minutes, stirring occasionally to prevent burning.
- Add bell pepper: Stir in the chopped red bell pepper and cook for an additional 3 to 4 minutes until the pepper softens.
- Return beef and season: Return the ground beef mixture to the skillet. Season the entire mixture with smoked paprika, ground cumin, chili powder, salt, and pepper. Stir well to combine all flavors.
- Add spinach: Reduce heat to low and fold in the fresh spinach leaves. Cook until the spinach wilts, about 1 to 2 minutes.
