Ingredients
Scale
Vegetables
- 1 medium head cauliflower, cut into florets
- 8 oz cremini mushrooms, halved
- 4 cloves garlic, minced
Seasonings & Oils
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
Optional Garnish
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven: Set your oven temperature to 425°F (220°C) to ensure it’s hot enough for roasting the vegetables to a perfect golden color and tender texture.
- Toss the vegetables with seasonings: In a large bowl, combine the cauliflower florets and halved cremini mushrooms with olive oil, minced garlic, dried thyme, dried rosemary, salt, and freshly ground black pepper. Mix thoroughly so each piece is well-coated with the flavorful mixture.
- Arrange on baking sheet: Spread the coated vegetables evenly in a single layer on a parchment paper-lined baking sheet. This promotes even roasting and prevents sticking.
- Roast the vegetables: Place the baking sheet in the oven and roast for 25 to 30 minutes, stirring halfway through the cooking time to ensure even browning. You want the cauliflower to be tender and golden brown, and the mushrooms to develop a deep, browned color.
- Add finishing touches: Once roasted, optionally drizzle the vegetables with fresh lemon juice and sprinkle with chopped fresh parsley for a burst of brightness and color before serving.
Notes
- Use parchment paper for easier cleanup and to prevent sticking.
- Stir halfway through roasting to ensure even cooking and browning.
- Adjust seasoning to taste, adding more salt or herbs as desired.
- Serve as a side dish or a healthy vegetarian main course.
- For extra flavor, sprinkle with grated Parmesan before roasting (optional, not vegan).
