Instructions

  1. Preheat and prepare pastry: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper. Place one sheet of thawed puff pastry onto one of the baking sheets, gently roll it out into a flat square shape, then cut it into 6 equal rectangles.
  2. Make jam filling: In a small bowl, whisk together the strawberry jam and cornstarch until smooth to thicken the filling slightly. Spoon about 1 ½ tablespoons of this jam mixture onto 3 of the puff pastry rectangles, leaving a ½-inch border on all edges free of jam.
  3. Apply egg wash: In another small bowl, whisk the large egg with 1 tablespoon of water to create an egg wash. Lightly brush the edges of the jam-topped rectangles (the pastry border) with this egg wash using a pastry brush or your fingertip. This helps seal the pastry when topped.
