Ingredients
Scale
Chicken Marinade
- 1 pound boneless chicken thighs or breasts, cut into bite-size pieces
- ¼ cup yogurt
- 2 tablespoons oil of choice
- 1 tablespoon lemon juice
- 3-4 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- ½ teaspoon garam masala
- ½ teaspoon fenugreek
- ½ teaspoon curry powder
- ½ teaspoon chili powder
- ½ teaspoon turmeric
- ½ teaspoon black pepper
Vegetables
- ½ onion, sliced or chopped
- ½ bell pepper, sliced or chopped
Slider Assembly
- 1 package slider buns (pack of 12)
- 1-2 cups shredded mozzarella cheese or cheese of choice
Sauces and Herb Butter
- ½ cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon hot sauce, sriracha, or red chili sauce
- 1 teaspoon Dijon mustard
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 tablespoons cilantro or parsley, minced
Instructions
- Marinate: In a medium bowl, combine the chicken pieces with yogurt, oil, lemon juice, minced garlic, and all the spices including cumin, coriander, salt, garam masala, fenugreek, curry powder, chili powder, turmeric, and black pepper. Mix thoroughly to coat the chicken well. Cover and refrigerate to marinate for at least 30 minutes or up to 48 hours to develop deep flavor.
- Cook the Chicken: Heat a heavy-duty skillet or frying pan on medium-high heat. Add the marinated chicken along with sliced onion and bell pepper. Cook everything on high heat for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender but still vibrant.
- Prepare Sauce and Herb Butter: In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and Dijon mustard to create the slider sauce. In another bowl, whisk melted butter with minced garlic and chopped cilantro or parsley to make the herb butter. Meanwhile, preheat the oven to 375ºF and line a 9×13-inch baking dish with foil, lightly greasing it with spray, oil, or butter.
- Assemble the Sliders: Slice the slider buns in half horizontally. Place the bottom halves evenly in the prepared baking dish. Spread the sauce evenly on the insides of both the bottom and top buns. Spoon the cooked chicken mixture over the bottom buns and sprinkle generously with shredded mozzarella cheese. Place the top buns on each slider and press down gently. Brush the tops with the garlicky herb butter mixture.
- Bake: Place the assembled sliders in the oven and bake at 375ºF for about 15 minutes, or until the cheese has melted and the tops are nicely coated with butter and lightly golden. Remove from oven and cover with foil to keep warm until ready to serve.
Notes
- Marinating the chicken longer (up to 48 hours) enhances the depth of flavor.
- You can substitute mozzarella with cheddar or pepper jack cheese for different flavor profiles.
- Use boneless, skinless chicken thighs for more tender, juicy sliders compared to chicken breasts.
- Adjust the amount of chili powder and hot sauce to control the spice level.
- To speed up preparation, marinate chicken overnight and assemble just before baking.
- Herb butter can be made with parsley if cilantro is not available or preferred.
- Slider buns can be lightly toasted beforehand for extra texture.
