  • 1/2 tablespoon salt (remaining half)

Instructions

  1. Prepare the Zucchini: Finely grate the zucchini into a large mixing bowl. Sprinkle half of the salt evenly over the grated zucchini and let it sit for 10 minutes to draw out excess moisture.
  2. Remove Excess Moisture: After the zucchini has rested, use your hands or a cheesecloth to thoroughly squeeze out all the liquid. This step is key to achieving crispy fritters.
  3. Mix the Batter: In a large mixing bowl, combine the drained zucchini, thinly sliced scallions, beaten eggs, almond flour, baking powder, the remaining salt, and freshly grated parmesan cheese. Stir until all ingredients are well incorporated.
  4. Heat the Oil: Warm 2 tablespoons of oil in a non-stick skillet over medium heat until hot but not smoking.
  5. Fry the Fritters: Scoop spoonfuls of the zucchini batter into the skillet, pressing each into a flat, disc-like shape. Fry for 2–3 minutes on each side until they turn golden brown and crispy.
