Description

This Cottage Cheese and Spinach Crustless Quiche is a delicious, healthy, and low-carb dish perfect for breakfast, brunch, or a light dinner. It features a creamy blend of cottage cheese, fresh spinach, eggs, sautéed onions, and cheddar cheese, baked to perfection without a crust for a gluten-free and protein-packed meal.

Ingredients

Scale

Quiche Mixture

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Cheese Topping

  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it reaches the proper temperature before baking the quiche.
  2. Chop and sauté the onions: Finely chop the onion and sauté it in a pan over medium heat for about 5 minutes until softened. During the last minute, add minced garlic to enhance the flavor.
  3. Mix the ingredients: In a large bowl, combine the cottage cheese, sautéed onion mixture, chopped spinach, eggs, garlic powder, salt, pepper, and half of the shredded cheddar cheese. Stir the mixture until ingredients are evenly incorporated.
  4. Prepare the baking dish: Grease a suitable baking dish and pour the quiche mixture into it, spreading it out evenly.
  5. Top with cheddar and bake: Sprinkle the remaining shredded cheddar cheese evenly over the top of the mixture. Place in the preheated oven and bake for 30-35 minutes or until the quiche is set and golden on top.
  6. Cooling and serving: Remove from the oven and allow the quiche to cool for about 10 minutes. Slice into 6 pieces and serve warm or at room temperature.

Notes

  • You can substitute fresh spinach with frozen spinach; just be sure to thaw and drain excess water before mixing.
  • For extra flavor, add herbs like thyme or parsley to the mixture.
  • This crustless quiche can be stored in the refrigerator for up to 3 days and reheated before serving.
  • Ensure the quiche is fully cooked by checking that the center is set and no longer jiggly.
