Instructions

  1. Prepare the crackers: Line a large baking sheet with parchment paper. Place 16 crackers on the baking sheet and spoon about 1 ½ teaspoons of creamy peanut butter onto the center of each cracker. Top each with a second cracker and press lightly to spread the peanut butter evenly to the edges. Wipe off any peanut butter seepage gently with a paper towel to ensure clean edges before dipping.
  2. Melt the chocolate: Place the chocolate melting wafers in a medium microwave-safe bowl. Microwave on defrost or 50% power for 30 seconds, then stir. If the wafers are not fully melted, continue microwaving in 15-second increments, stirring in between, until the chocolate is smooth and completely melted.
  3. Dip the cookies: Using two forks, pick up each peanut butter sandwich cookie and dip it into the melted chocolate. Flip the cookie to coat fully and allow any excess chocolate to drip back into the bowl through the forks. Transfer the coated cookie to the lined baking sheet, using one fork to gently slide it off the other fork. Repeat for all cookies, then sprinkle decorative Christmas nonpareils on top before the chocolate sets.
  4. Chill and store: Place the baking sheet with the dipped cookies in the refrigerator until the chocolate coating is firm. Once set, transfer the cookies to an airtight container. Store them at room temperature or refrigerate to maintain freshness.
