Sauce

  • 1/2 cup vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Pasta

  • 12 ounces pasta (such as fettuccine or spaghetti)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, and 1/2 teaspoon salt. Cook, stirring occasionally, for 25-30 minutes until onions are golden brown and caramelized. Lower heat as needed to avoid burning.
  3. Add Garlic: Add minced garlic to skillet and cook for 1-2 minutes until fragrant.
  4. Deglaze the Pan: Pour white wine into skillet (if using) to deglaze. Scrape up browned bits from bottom and simmer until wine mostly evaporates.
  5. Add Broth and Cream: Add vegetable or chicken broth and heavy cream to skillet. Stir and simmer for about 5 minutes until sauce slightly thickens.
  6. Add Cheese: Stir in grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  7. Combine Pasta and Sauce: Add cooked pasta to skillet and toss to coat evenly with sauce.
  8. Serve: Divide pasta among plates. Garnish with chopped fresh parsley and extra Parmesan cheese if desired.
