Ingredients
Scale
Caramelized Onions
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon sugar
- 1/2 teaspoon salt
Sauce
- 3 cloves garlic, minced
- 1/2 cup white wine (optional)
- 1/2 cup vegetable or chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Pasta
- 12 ounces pasta (such as fettuccine or spaghetti)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, and 1/2 teaspoon salt. Cook, stirring occasionally, for 25-30 minutes until onions are golden brown and caramelized. Lower heat as needed to avoid burning.
- Add Garlic: Add minced garlic to skillet and cook for 1-2 minutes until fragrant.
- Deglaze the Pan: Pour white wine into skillet (if using) to deglaze. Scrape up browned bits from bottom and simmer until wine mostly evaporates.
- Add Broth and Cream: Add vegetable or chicken broth and heavy cream to skillet. Stir and simmer for about 5 minutes until sauce slightly thickens.
- Add Cheese: Stir in grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
- Combine Pasta and Sauce: Add cooked pasta to skillet and toss to coat evenly with sauce.
- Serve: Divide pasta among plates. Garnish with chopped fresh parsley and extra Parmesan cheese if desired.
Notes
- Use white wine to add depth to the sauce, but it can be omitted for a non-alcoholic version.
- Be patient when caramelizing onions to develop a rich, sweet flavor without burning.
- Freshly grated Parmesan cheese melts best and enhances the sauce’s flavor.
- Any long pasta like fettuccine, spaghetti, or linguine works well.
- Adjust salt and pepper seasoning according to taste.
