Caramel Pecan Topping

  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup honey
  • 1/4 cup heavy cream
  • 2 cups pecans, roughly chopped


Instructions

  1. Prepare the Dough: In a large bowl, combine the flour, granulated sugar, instant yeast, and salt. Add the warm milk, melted butter, and eggs, then knead the mixture until the dough becomes smooth and elastic, approximately 10 minutes.
  2. First Rise: Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until it doubles in size.
  3. Make Caramel Pecan Topping: While the dough rises, combine brown sugar, butter, honey, and heavy cream in a saucepan. Bring to a boil while stirring constantly, then simmer for 3 minutes. Remove from heat and stir in the chopped pecans.
  4. Prepare Baking Pan: Pour the caramel pecan mixture into a greased 9×13 inch baking pan, spreading evenly to cover the bottom.
  5. Roll out Dough: Once the dough has risen, turn it out onto a floured surface and roll into a 12×18 inch rectangle. Spread the softened butter evenly over the dough, then sprinkle with the cinnamon-sugar mixture.
  6. Form Rolls: Starting from the long end, roll the dough tightly into a log. Cut the log into 12 equal-sized pieces.
  7. Second Rise: Place the cut rolls cut-side down over the prepared caramel pecan layer in the baking pan. Cover and let them rise again for 30 minutes.
