Description

Bruschetta Chicken is a delicious Italian-American main course featuring tender baked chicken breasts topped with a fresh, vibrant tomato and basil bruschetta mixture and melted mozzarella cheese. This gluten-free, low-carb dish combines classic flavors with an easy baking method to create a wholesome and satisfying meal perfect for weeknights or entertaining.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Bruschetta Topping

  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • ¼ cup fresh basil, chopped

Cheese & Garnish

  • 1 cup shredded mozzarella cheese
  • Optional: balsamic glaze for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the chicken.
  2. Season Chicken: Rub the chicken breasts evenly with olive oil, Italian seasoning, garlic powder, salt, and pepper to infuse them with flavor.
  3. Bake Chicken: Place the seasoned chicken breasts in a baking dish and bake for 20–25 minutes, or until they reach an internal temperature of 165°F and are cooked through.
  4. Prepare Bruschetta: While the chicken bakes, mix the halved cherry tomatoes, minced garlic, balsamic vinegar, and chopped fresh basil in a bowl to make the bruschetta topping.
  5. Add Cheese: Once the chicken is cooked, sprinkle shredded mozzarella evenly over each breast and return to the oven for 2–3 minutes until the cheese melts completely.
  6. Assemble and Serve: Remove the chicken from the oven, spoon the prepared tomato mixture over each cheesy chicken breast, and drizzle with balsamic glaze if desired. Serve warm for the best flavor.

Notes

  • For added flavor and a smoky touch, try grilling the chicken instead of baking it.
  • Serve the bruschetta chicken over pasta or a bed of fresh arugula to complete the meal.
