Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
Bruschetta Topping
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- ¼ cup fresh basil, chopped
Cheese & Garnish
- 1 cup shredded mozzarella cheese
- Optional: balsamic glaze for drizzling
Instructions
- Preheat Oven: Preheat your oven to 400°F to prepare for baking the chicken.
- Season Chicken: Rub the chicken breasts evenly with olive oil, Italian seasoning, garlic powder, salt, and pepper to infuse them with flavor.
- Bake Chicken: Place the seasoned chicken breasts in a baking dish and bake for 20–25 minutes, or until they reach an internal temperature of 165°F and are cooked through.
- Prepare Bruschetta: While the chicken bakes, mix the halved cherry tomatoes, minced garlic, balsamic vinegar, and chopped fresh basil in a bowl to make the bruschetta topping.
- Add Cheese: Once the chicken is cooked, sprinkle shredded mozzarella evenly over each breast and return to the oven for 2–3 minutes until the cheese melts completely.
- Assemble and Serve: Remove the chicken from the oven, spoon the prepared tomato mixture over each cheesy chicken breast, and drizzle with balsamic glaze if desired. Serve warm for the best flavor.
Notes
- For added flavor and a smoky touch, try grilling the chicken instead of baking it.
- Serve the bruschetta chicken over pasta or a bed of fresh arugula to complete the meal.
