Salad Ingredients
- 1 pint fresh blueberries
- 2 peaches, diced
- 2 Persian cucumbers, sliced
- 1/2 cup crumbled feta cheese
Vinaigrette Ingredients
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh basil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Combine Salad Ingredients: In a large serving bowl, gently mix together the blueberries, diced peaches, sliced cucumbers, and crumbled feta cheese, ensuring an even distribution of all components.
- Prepare Vinaigrette: In a jar with a lid or a measuring cup, add the fresh lemon juice, Dijon mustard, honey, olive oil, chopped basil, kosher salt, and freshly ground black pepper.
- Mix Vinaigrette: Secure the lid tightly on the jar or use a whisk in the measuring cup and shake or whisk vigorously until the vinaigrette is well combined and emulsified.
- Toss Salad with Vinaigrette: Pour the prepared vinaigrette over the salad ingredients. Gently toss everything together to evenly coat the fruit and vegetables without bruising the delicate berries and peaches.
- Serve or Chill: Taste the salad and adjust seasoning with additional salt or pepper if needed. Garnish with extra fresh basil leaves if desired. Serve immediately or cover and refrigerate until ready to serve to let the flavors meld.
Notes
- Use ripe but firm peaches to maintain texture and avoid mushiness in the salad.
- For a dairy-free version, omit the feta or substitute with a vegan cheese alternative.
- Prepare the vinaigrette fresh to preserve the bright citrus and herb flavors.
- This salad is best enjoyed the same day but can be refrigerated up to 24 hours.
- Add toasted nuts such as walnuts or pecans for extra crunch and flavor variation.
