Instructions

  1. Prepare Blueberry Topping: In a small pot, combine blueberries with 1/2 cup sugar. Cover with a lid and cook over low heat for 10 minutes, stirring occasionally. Remove from heat and let cool completely, then refrigerate for 1 to 2 hours to allow the topping to thicken.
  2. Make the Crust: Preheat your oven to 350°F (175°C). In a bowl, stir together finely crushed graham crackers, 2 tablespoons sugar, and melted butter until evenly combined. Press this mixture firmly into a greased 9×13-inch baking dish to form an even crust layer.
  3. Mix the Cream Cheese Filling: In a mixing bowl, beat softened cream cheese together with 1/2 cup sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in 1 teaspoon pure vanilla extract until fully incorporated. Pour this creamy mixture evenly over the prepared graham cracker crust.
