Instructions

  1. Season the Beef: In a bowl, season the beef cubes evenly with kosher salt, black pepper, Italian seasoning, and cayenne pepper to infuse the meat with robust flavor.
  2. Sear the Beef: Heat 2 tablespoons of olive oil in a large soup pot over medium heat. In two batches, add the beef cubes and sear until golden brown on all sides to lock in juices. Remove the beef and set aside.
  3. Sauté Vegetables: In the same pot, add minced garlic and sliced mushrooms, sautéing for about 5 minutes until fragrant and tender. Then add diced onions, chopped carrots, and celery, cooking for an additional 5 minutes until vegetables soften.
  4. Simmer Soup: Return the seared beef cubes to the pot. Stir in balsamic vinegar and pour in the beef broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 1 hour, or until the beef becomes tender and flavors meld.
  5. Cook Noodles: Add the egg noodles to the soup and cook for 6 to 8 minutes until al dente. Remove the pot from heat to prevent overcooking the noodles.
