Bang Bang Sauce
- 1/2 cup mayonnaise (or 1/4 cup mayo + 1/4 cup Greek yogurt)
- 2 tablespoons sriracha, adjust to taste
- 1 tablespoon honey or sugar
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon chopped green onions
- 1 teaspoon sesame seeds
Instructions
- Prepare the Chicken: Cut the chicken into 1 to 1.5-inch chunks. Pat the pieces dry with paper towels, then season evenly with salt, black pepper, garlic powder, and smoked paprika if using. Toss the seasoned chicken chunks with olive oil until all pieces are well coated.
- Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, and rice vinegar or lime juice until the sauce is smooth and creamy. Adjust the sweetness or spiciness based on your preference.
- Thread the Skewers: Carefully thread the seasoned chicken pieces onto the soaked wooden or metal skewers, spacing them evenly to ensure even cooking.
- Grill the Skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to brown all sides, until the chicken is fully cooked through and has a slight char.
