Instructions
- Preparation: Start by gathering all your ingredients. Dice the bell pepper and onion, shred or dice the cooked chicken, and shred the cheese if not pre-shredded.
- Preheat Air Fryer: Preheat your air fryer to 375°F (190°C). This ensures the quesadillas cook evenly and become nice and crispy.
- Mix Filling: In a bowl, combine the shredded chicken, diced bell pepper, diced onion, and taco seasoning if using. Mix well so the flavors distribute evenly throughout the filling.
- Assemble Quesadilla: Lay one tortilla flat on a clean surface. Spread half of the cheese on one half of the tortilla. Then add half of the chicken and veggie mixture on top of the cheese. Sprinkle the remaining cheese over the filling, which helps the quesadilla stick together. Fold the tortilla in half, covering the filling.
- Repeat Assembly: Repeat the above process with the second tortilla to make the second quesadilla.
